Switch It Up With A Unique Salad

Your favorite winter comfort meals might be soups and casseroles, but have you ever tried a delicious, hearty winter salad? Different produce is available in the winter and can amp up any summer salad to take it into the cold-weather season. You can replace raisins with dried cranberries and cabbage with shaved Brussels sprouts to name a few ideas. We’ve put together a few of our favorites from Delish.

Parmesan Brussels Sprout Salad

Brussels sprouts are becoming more and more popular and there are new ways to enjoy them. This salad is loaded with goodness.

5 tbsp. EVOO

5 tbsp. lemon juice

1/4 cup freshly chopped parsley

kosher salt

ground black pepper

8 cups of shaved Brussels sprouts

1/2 cup toasted, chopped almonds

1/2 cup pomegranate seeds

In a mixing bowl, whisk EVOO, lemon juice, parsley, salt, and pepper. Add in the shaved Brussels sprouts and toss to combine. Let the mixture sit for at least 20 minutes and toss occasionally. Add in the almonds and pomegranate seeds, and top with parmesan before serving.

Kale Salad

Are you thinking kale isn’t for you? Considering giving it another try? Whip up this kale salad with apples and toasted almonds and have your mind changed!

1/2 cup olive oil

1/4 cup red wine vinegar

1/4 cup freshly squeezed orange juice

2 tbsp. minced shallot

Salt

Pepper

Whisk together dressing ingredients and set aside.

2 large bunches of kale, stems removed and roughly chopped

1 apple, thinly sliced

1/2 cup dried cherries

1/2 toasted sliced almonds

1/4 cup crumbled feta

Add Kale, dried cherries, almonds, and apples to a large mixing bowl and toss. Drizzle dressing over and toss until coated. Top with crumbled feta.

Gorgonzola Pear Chicken Salad

This salad is a great option to use leftovers from last night’s chicken dinner. It gives a perfect balance of salty and sweet with gorgonzola and pears.

Chicken, leftovers or prepared to your liking

10 oz. arugula

1 garlic glove, minced

1 tbsp. Dijon mustard

1/4 cup apple cider vinegar

salt

pepper

1/2 cup EVOO

2 pears, cored and sliced

2 oz. crumbled gorgonzola cheese

1 cup pecans

In a jar with a lid, combine EVOO, garlic, Dijon mustard, apple cider vinegar, salt, and pepper. Secure lid and shake to combine.

Arrange salad on a large platter with a bed of arugula, sliced pears, gorgonzola cheese, and pecans. Layer sliced chicken and drizzle with dressing.
