How Chama Gaucha Started

João Carlos Ongaratto opened the San Antonio location of Chama Gaucha in 2008.  João wanted to bring the dining style and hospitality of Southern Brazil, his homeland, to the area. After honing his skills for more than 20 years, he combined the dining experience seen in Brazil with the diversity of Texas to create Chama Gaucha, a fine dining experience that he knew people would love.

The rodizio style of dining that originated in Brazil takes customer service and the all-you-can-eat experience to a new level. Instead of a self-serve buffet, the service staff at Chama Gaucha brings delicious selections of succulent meat tableside. The server holds the meat on a vertical skewer. They then slice tender morsels for each guest throughout the evening. Once you sit down, the attentive staff will continue to provide you and your date with samples of meat until you signal that you have had your fill.

How Does it Work?

So you may be wondering exactly how enjoying a meal at Chama Gaucha works.  At Chama Gaucha, the service staff that brings you your selections of meat are also the chefs who prepare it. The trained Brazilian chef is called a gaucho. They’ll slice the meat and you’ll grab it with small tongs provided to you at your table setting. The other important item on your table is a card that is green on one side and red on the other. When you’re ready to sample more of Chama Gaucha’s menu, flip your card to the green side. When you’re done, turn it to the red side. The team at Chama Gaucha advises guests to start with small servings so that they can give each meat a try.

What’s on the Menu?

There are 12 prime cuts of beef, pork, chicken, and lamb available at Chama Gaucha. Some of the delicious cuts include:

  • Picanha – A prime cut of sirloin and the restaurant’s specialty.
  • Filet Mignon – The most tender cut of beef available. It is sprinkled with sea salt.
  • Cordeir – Seasoned leg of lamb or rack of lamb.
  • Frango e Linguiça – Marinated drumsticks or pork sausage.
  • Porco – A cut from a succulent rack of pork ribs.
